Using "a little of this and a little of that," the Misses Fitch and Poor came up with this recipe for pickup pancakes, one of their favorites. Especially good served with fresh fruit.

Hartwell Farm Pickup Pancakes

Ingredients:

  • 3/4 cup prepared waffle mix (any brand will do)
  • 1/2 cup cornmeal
  • 3/4 cup Bisquick
  • 1 tablespoon butter
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1 egg
  • 1/4 cup heavy crem
  • 1-1/4 cups milk

Instructions:

Lightly grease a heavy frying pan or griddle and heat until a drop of water sizzles on the surface. In a medium mixing bowl combine all ingredients. Blend with a whisk or an electric beater just until smooth. Do not overmix.

Drop by spoonfuls onto the hot pan. Cook until bubbles form on the top, flip, and cook for 1 minute longer. Serve with butter and maple syrup.
