Healthier Coleslaw

Yield: Makes 4 servings.

Ingredients:

  • 1 cup grated carrots
  • 1 cup grated cabbage
  • 1/3 cup drained, mashed tofu
  • 1/3 cup chopped scallions
  • 1/4 cup dulse flakes (flaked kelp)
  • 1 teaspoon lemon juice
  • 1/2 teaspoon mustard powder
  • 1/2 to 3/4 cup soy (or other) mayonnaise

Instructions:

Mix all ingredients and serve as a side salad or as a sandwich filling in pita pockets or tortilla wraps.
