Italian Dressing

This amount of dressing makes enough for a salad that will serve ten to fifteen people. If you are making salad for four people, put a cupful of the dressing (minus the lemon juice) in a jar and add only one tablespoon lemon juice right before serving.

Ingredients:

  • 1 cup apple juice
  • 1 cup sunflower oil (or Puritan Oil)
  • 1/2 teaspoon each of oregano, sweet basil, and crushed mint leaves
  • 1 teaspoon dry mustard
  • 1 tablespoon minced onion (more or less depending on personal preference)
  • 2 tablespoons lemon juice

Instructions:

In a jar with tight-fitting lid, mix all but the last ingredient together. Add lemon juice at the last minute, and shake well to blend.
