Ingredients:

  • 1 large ripe avocado, peeled and pitted
  • 1-1/2 tablespoons fresh chopped cilantro, plus extra for garnish
  • 1 tablespoon freshly squeezed lime juice
  • Kosher or sea salt and freshly ground black pepper
  • 8 ounces corn chips
  • 4 ounces cooked lobster meat, roughly chopped

Instructions:

In a small bowl, mash avocado; add cilantro and lime juice. Season to taste with salt and pepper. Place 1 teaspoon avocado mixture onto each corn chip, top with 1 teaspoon lobster, and sprinkle with cilantro. Serve immediately.
