1-1/2 tablespoons fresh chopped cilantro, plus extra for garnish
1 tablespoon freshly squeezed lime juice
Kosher or sea salt and freshly ground black pepper
8 ounces corn chips
4 ounces cooked lobster meat, roughly chopped
In a small bowl, mash avocado; add cilantro and lime juice. Season to taste with salt and pepper. Place 1 teaspoon avocado mixture onto each corn chip, top with 1 teaspoon lobster, and sprinkle with cilantro. Serve immediately.
