Ingredients:

  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 1-1/2 cups flour
  • 1 teaspoon baking powder
  • pinch of salt
  • 1/2 cup milk
  • grated rind and juice from 1 large lemon
  • 1/2 cup confectioners' sugar

Instructions:

Cream together shortening and sugar, then beat in eggs. Sift together dry ingredients and stir into sugar mixture. Beat in the milk and lemon rind. Bake at 350 degrees F in a buttered and floured 9x5-inch loaf pan for 45 minutes. Combine lemon juice and confectioners' sugar to make a glaze and drizzle over the warm cake.
