Yield: About 3-1/2 cups mix, enough for 10 2-1/2-ounce pops

Ingredients:

1 4-inch piece ginger, peeled, cut into large chunks
2/3 cup honey
1/4 cup plus 2-1/4 cups orange juice
3/4 cup low-fat plain yogurt

Instructions:

Combine ginger, honey, and 1/4 cup orange juice in a blender. Blend together until ginger is pureed. Pour mixture through a fine-mesh strainer, pressing with a spatula to remove ginger fibers. Rinse blender, then pour strained liquid back into blender with remaining orange juice and yogurt. Blend 20 seconds. Pour into molds; freeze 4 hours or overnight.

    A favorite with adults and kids alike at my house. Cool and creamy in the summer; a real treat with tree-ripened fruit in the winter.
