1 x 19oz. package House Tofu Steak, Garlic & Pepper drained & each piece cut into 4 squares
1 zucchini squash, partially peeled and sliced 1/3 inch slices
1 eggplant, partially peeled and sliced 1/3 inch pieces
1 red bell pepper, cut into bite size pieces
2 tomatoes, seeded and cut into 6 pieces
1 onion, cut into 1/2 inch slices
1 x 12oz. can tomato sauce
1 bay leaf
1 tsp. salt
1/2 tsp. black pepper
2 Tbsp. chopped parsley
1. Add Tofu, a ll vegetables, except parsley, tomato sauce, and the bay leaf into a large microwave-proof bowl. Season with salt and pepper. Cover with plastic wrap
2. Heat in microwave on High power for 16 to 25 minutes. Remove bowl and sprinkle with parsley. Serve hot.
