Mary’s Fresh Apple Cake

Yield: Serves 8


  • 1-1/4 cups cooking oil
  • 2 cups sugar
  • 3 eggs
  • 2 teaspoons vanilla
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 teaspoon cinnamon
  • 1 cup chopped pecans
  • 3 medium apples, peeled and diced


Preheat oven to 325 degrees F. Combine cooking oil, sugar, and eggs. Beat at medium speed for 3 minutes. Add vanilla. Combine dry ingredients (flour, baking soda, salt, cinnamon) and add to above mixture. Batter will be very thick. Fold in chopped pecans and apples. Bake in greased and floured tube or Bundt pan at 325 degrees F for 1 hour and 20 minutes or until cake is done.

    This recipe makes a moist, apple packed cake that makes its own crunchy top while it bakes. Delicious!

    A wonderful recipe; not only tasty, but nutritious,too. It has the consistancy similar to a rich, bread pudding.

    Made this recipe for the first time for Thanksgiving last year in 2007. Everybody loved it! It has been added as a traditional Thanksgiving item on my menu! Loved the top crust!
