I finally found a meatloaf that even I can’t screw up, and that everyone in the house will eat. This recipe came from off the back of a Campbell’s Soup can. I only change two things, to give just a little bit more kick.

- 1 can Campbell's Southwest Style Pepper Jack Soup
- 1 1/2 lb ground beef
- 1/2 cup bread crumbs
- 1 egg beaten
- 1 medium onion chopped
- 1 tsp garlic powder
- 1/2 cup taco sauce
Instructions:1. Mix 1/2 can soup, beef, bread crumbs, egg, onion and garlic powder thoroughly with hands. Place firmly in a loaf pan.
2. Bake at 350 for 30 minutes.
3. Mix remaining soup and taco sauce together. Spoon soup mixure over meatloaf. Bake for another 30 minutes, or until done.
