Mustard Fried Chicken Breast

- 4 chicken breast
- 1/2 tsp salt
- dash black pepper
- 1 egg
- 2 tbsp prepared mustard
- 1/4 cup parmesan cheese
- 1/4 cups bread crumbs
- 2 tbps oil
- 1 green pepper, seeded sliced
Instructions:Wipe chicken breast with damp paper toweling. Sprinkle with salt and pepper.
In large bowl, beat egg and mustard. In separate bowl combine paramesan cheese and bread crumbs, mix well.
Dip each chicken breast in egg mixture. The roll in cheese mixture till evenly coated. Lay chicken on wax paper and allow the coating to set about 10 minutes.
Saute chicken on both sides in heat oil for 15 to 20 minutes or til chicken is tender. Arrange on serving platter. Sprinkle with the green pepper slices.
