Yield: Makes 1 quart.

Exquisite in color and subtly tart, an elegant after-dinner drink.

Ingredients:

1-1/2 pounds dried apricots
1 pound sugar (1-3/4 cups)
1 quart vodka

Instructions:

Place (do not mix) ingredients in a half-gallon flat-topped glass jar. Turn the jar twice a day (allowing jar to set on its top for half the day) for 8 days - and your first batch is ready. You may use the same apricots (more sugar and vodka) to make more - only let the second batch set for 12 to 14 days.
