At Cogswell's Grant, Caroline Craig always kept the cookie jar full. Mrs. Little liked crisp cookies, and these nutty brown-sugar treats were her favorites. (If you make this recipe on a damp or rainy day, the cookies won't be quite as crisp.)Ingredients:
Cooking spray1/2 cup (1 stick, or 8 tablespoons) salted butter
1 egg
1 cup brown sugar
1 teaspoon vanilla extract
3/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup chopped walnuts or pecans
Instructions:
Preheat oven to 350° and mist two 9x12-inch cookie sheets with cooking spray. Cream together butter, egg, brown sugar, and vanilla. Add the rest of the ingredients and mix well. Drop mixture by the heaping teaspoonful onto the cookie sheets and flatten slightly. Don't overcrowd them, as the dough will spread into thin, crisp cookies.
