Use peanuts or peanut butter for this unusual soup.
3 tablespoons butter
1 onion, peeled and chopped
1 tablespoon flour
4 cups chicken stock
1/4 cup peanut butter or 1/2 cup roasted peanuts
1/2 cup cream
Dash of Tabasco
Melt butter in soup kettle. Sauté onion until tender. Sprinkle with flour and stir until blended. Add stock and heat to simmer, stirring constantly. Add peanut butter and stir until blended. (If peanuts are used, simmer mixture 15 minutes, covered, and puree in food mill.) Gently stir in cream and Tabasco and heat thoroughly. Do not boil.
