Yield: Makes 6 servings.
Ingredients:
1-1/2 cups cooked rice or small-shaped pasta1 cup shredded Mozzarella
3/4 cup quartered pepperoni slices
1 large tomato, diced
1/4 cup diced green pepper
1/4 cup diced red pepper
3 scallions, chopped
1/4 cup sliced mushrooms
1/4 cup sliced olives
vinaigrette of your choice
Instructions:
Chill the cooked rice or pasta. Toss with other ingredients, then toss with 1/2 cup of the vinaigrette of your choice. Chill. Serve with additional dressing for those who want it.Browse Similar Recipes
