Thoroughly wash a pound of kale; and cut it into very small pieces. Parboil 5 cubed potatoes. Add to the potatoes and water in which they have been cooked two chopped onions, 1 pound sliced chourico (two tablespoons bacon drippings may be substituted, if necessary), the kale, salt and pepper to taste, and let simmer for an hour or a little longer, adding more water if necessary. A second version of this famous soup calls for soaking a cup of pea beans overnight and cooking them with the above mixture.
