Potato Pancakes

Yield: Serves 4.

Our version of the classic German potato pancake. Serve with sausage and applesauce for a great lunch.

Ingredients:

2 cups grated raw potato (peeled)
3 eggs, beaten
2 tablespoons flour
1 teaspoon salt
1 tablespoon grated onion

Instructions:

Chill the grated potato in ice water; drain and dry well on towel. Add eggs, flour, salt and onion. Shape into patties about 3 inches in diameter. Brown each side until crisp, in 1/4-inch hot fat. Serve immediately.

    I love this recipe! It reminds me of the way my mother and grandmother used to make them. They are a hearty warm winter snack. Tasty with Light Wassail.
