Yield: 1 loaf

Ingredients:

3/4 cup sugar
3/4 cup brown sugar
1/2 cup salad oil
3 egg yolks
1 can pumpkin (10-1/2 ounces)
1-3/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1/8 teaspoon ground nutmeg
1/2 cup cold water

Instructions:

Preheat oven to 325 degrees F. Grease a loaf pan. Blend sugars and oil. Add egg yolks and whip until light and fluffy, about 5 minutes. Then add pumpkin. Sift dry ingredients together and then combine with the wet mixture; adding water while mixing. Pour batter into loaf pan. Bake for 50 to 60 minutes. Test for doneness with a toothpick.

    I made the recipe as stated plus added a 1/2 cup of chopped cranberries macerated in 2 TBS sugar. I also added a 1/2 cup of chopped pecans. My husband LOVES it and eats it warm with whipped cream on top!!
