  • 8 ounces cream cheese, softened
  • 3/4 cup sugar
  • 3 eggs, beaten
  • 1 teaspoon orange rind
  • 1 teaspoon cinnamon
  • 1 can (16 ounces) pumpkin
  • 1/2 cup biscuit mix
  • 1/4 teaspoon each of vanilla extract, ginger, and nutmeg


Combine all ingredients and mix well. Pour into a greased 9-inch pie pan, and bake at 350 degrees F for 45 minutes. Chill for at least 3 hours. Serve with whipped cream.
