Refreshing Tomato Soup

Yield: Serves 4-6

An excellent recipe that belongs in everyone's repertoire. Incredibly easy to make. Those who are calorie conscious might want to substitute yogurt for the sour cream. --Windham Hill Inn, West Townshend, Vermont

Ingredients:

  • 3 cups tomato juice
  • 2 tablespoons tomato paste
  • 4 scallions, minced
  • Zest of 1/2 lemon
  • 2 tablespoons fresh lemon juice
  • 1 cup sour cream
  • 2 teaspoons superfine sugar
  • 1/8 teaspoon powdered thyme
  • 1/2 teaspoon curry powder Salt and freshly ground pepper to taste Fresh chopped chives

Instructions:

Whisk all ingredients together in large stainless steel or glass bowl. Chill thoroughly. Ladle into chilled individual bowls and garnish with fresh chopped chives.
