- 1-1/4 cups granulated sugar, divided
- 1/2 cup brown sugar
- 1/2 cup unsalted butter
- 1 egg
- 1 cup buttermilk
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 2 cups all-purpose flour
- 2 cups chopped rhubarb
- 1 teaspoon cinnamon
- 1/2 cup chopped nuts (your choice)
Instructions:Heat oven to 350°.
In a large bowl, mix 1 cup granulated sugar, brown sugar, butter, egg, buttermilk, baking soda, vanilla, flour, and rhubarb, one at a time in the order given.
In a separate bowl, combine 1/4 cup granulated sugar, cinnamon, and nuts.
Stir half of nut mix into cake batter. Pour cake batter into large loaf pan. Sprinkle reserved nut mix on top.
Bake 30-40 minutes.
