Ingredients:

1 cup cooked rice
1/2 pound hamburger (optional)
3 green peppers, chopped
3 onions, chopped
2 eggs, lightly beaten
1 1O-ounce package spinach, cooked and drained
bread crumbs to thicken, if needed
oregano, garlic, salt, pepper, and thyme to taste
1/2 pound brick cheese, grated
1/2 cup Parmesan cheese, grated

Instructions:

Mix all ingredients together and spread in 9x13 pan in a layer about 1 inch thick. Bake at 350°F for 45 minutes. Cut into serving sizes. Tastes good hot or cold.
