Scald milk, sugar, and spices, pour in semolina and stir constantly. Cook on medium until thickened.
Pull out vanilla bean and cinnamon stick and stir in butter and zest. Temper in the yolks. Whip the whites and fold into the mixture, spoon into decorative dishes and chill.
Serve with fresh blueberries, candied fennel, or fresh mint.
