Yield: 4 servings
- 1 cup butter, softened
- 2/3 cup powdered sugar
- 1/2 to 3/4 teaspoon vanilla extract
- 2 cups all-purpose flour
Instructions:Preheat oven to 325 degrees.
Beat butter until light. Add powdered sugar and vanilla extract. Using a rubber scraper to stir, add flour.
Roll into small balls and flatten. Prick with fork. Or press into 8-inch square baking dish to a depth of 1/2 inch. Prick with fork.
Bake 20 to 30 minutes or until golden brown.
