Shrimp Curry

Yield: Serves 6

This is a great production, interesting to prepare and dramatic to serve. It is easy, but does take a good deal of time.

Ingredients:

  • 3 pounds shrimp
  • shrimp mix (a blend of herbs packaged especially for this purpose)
  • 2 tablespoons butter
  • 3 onions, chopped
  • 2 apples, peeled, cored, and chopped
  • 1/2 cup raisins, cut in half
  • curry powder to taste
  • 2 cloves mashed garlic (optional)
  • 4 tablespoons Major Grey's mango chutney
  • 1 quart chicken stock
  • coconut milk when available
  • flour if necessary
