Yield: Serves 4-5.
- 1-1/2 pounds cooked, shelled and deveined shrimp
- 1 cup mayonnaise
- 1/2 cup seeded, chopped cucumber
- 2 tablespoons chopped parsley
- 2 tablespoons chopped chives
- 1 tablespoon horseradish
- 1/2 teaspoon dry mustard
- 2 teaspoons lemon juice
- 1/2 teaspoon salt
Instructions:Chill the shrimp. Mix the remaining ingredients together and chill.
Just before serving, mix the sauce with the shrimp and place on crisp lettuce.
