Shrimp Remoulade

Yield: Serves 4-5.

Planning a very special dinner? Try this for openers.

Ingredients:

  • 1-1/2 pounds cooked, shelled and deveined shrimp
  • 1 cup mayonnaise
  • 1/2 cup seeded, chopped cucumber
  • 2 tablespoons chopped parsley
  • 2 tablespoons chopped chives
  • 1 tablespoon horseradish
  • 1/2 teaspoon dry mustard
  • 2 teaspoons lemon juice
  • 1/2 teaspoon salt

Instructions:

Chill the shrimp. Mix the remaining ingredients together and chill.
Just before serving, mix the sauce with the shrimp and place on crisp lettuce.
