These were absolutely delicious! I made them for a staff appreciation breakfast at my daughter’s high school, and they present very well. The Lemon Ginger Cream LOOKS very rich, so many people did not take it with their fruit. Boy, did they miss out on the best part! In the future, I will put a little note next to the cream telling them that it is actually not high in fat and then list what it has in it. That way they will put some on the skewers of fruit! I also used canned pineapple instead of a whole pineapple for ease of preparation, and they still tasted delicious!
