Southern Salmon Croquettes

Yield: 6-8 patties
I make these for my youngsters and they adore them with a warm side dish of shells-n-cheese. This recipe is fast enough for even the working moms!Ingredients:
1 14-3/4-ounce can tuna2 eggs
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
salt and pepper to taste
Ritz crackers (wheat works too)
1-1/2 cups cornmeal
salt, pepper, paprika
Canola oil
Instructions:
Drain and remove all bones from canned tuna. In small bowl combine tuna, well flaked, and eggs, garlic and onion powder, salt and pepper.Finely crumble, (I use a food processor) Ritz crackers, six or more at a time. Add enough crackers to tuna mixture to create large clumps.
Divide up tuna mixture as you would hamburger patties. Patty them out, making six-eight patties.
Heat enough canola oil to cover bottom of large skillet. In separate plate, mix corn meal, salt, pepper, paprika (enough to flavor corn meal).
Roll salmon patties in cornmeal. Add gently to canola oil and fry on medium-medium high heat for about six minutes. Flip and repeat. Flip again cook a few more minutes longer until golden brown.
Drain well on paper towel covered plate. Serve warm with salad, pasta or favorite veggies.
