These rich crepes make a wonderful luncheon or supper dish.

For the batter:


  • 1 cup milk
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1/4 cup water
  • 3 tablespoons salted butter, melted
  • 1/2 teaspoon table salt


Put the batter ingredients into a blender and mix until smooth. Let stand at least 30 minutes (up to 8 hours).

For the filling:


  • 3 tablespoons salted butter
  • 10 ounces sliced button mushrooms
  • 2 tablespoons minced shallots
  • 1-1/2 tablespoons all-purpose flour
  • 1 cup chicken or vegetable broth
  • 10 ounces fresh baby spinach
  • 2 ounces Gruy


Make the filling: In a skillet over high heat, melt butter and saut
