This casserole makes an excellent one-dish fish meal -- and the spinach adds nice color.


  • 1 to 2 pounds hake fillets
  • 1 medium onion, chopped fine
  • 1/2 cup finely chopped celery
  • Salt and pepper to taste
  • 1/4 cup olive oil
  • 1 package (1 pound) fresh spinach
  • 2 medium potatoes, cooked and mashed
  • 1 beaten egg
  • 1/2 pound grated cheddar cheese
