Spinach Pie

Yield: Serves 8

"This recipe was given to us by a friend. We usually serve it at our Wednesday noon buffet luncheon. It can be served hot or cold and looks so pretty cut in eighths, with a tomato slice garnishing each piece." --Oakland House, Herricks (Sargentville P.O.), Maine

Ingredients:

  • 1 package (10 ounces) frozen chopped spinach
  • 1 carton (12 ounces) cottage cheese
  • 1 cup grated cheddar or mozzarella cheese
  • 3 eggs
  • 2 tablespoons oil
  • 1 teaspoon onion or garlic salt
  • Freshly ground pepper

Instructions:

Cook spinach about 5 minutes, drain, and press out all water. Combine cottage cheese, cheddar or mozzarella, spinach, eggs, oil, and seasonings. Pour mixture into lightly oiled 9-inch pie plate. Bake at 350 degrees F for 40 minutes or until knife comes out clean. Dot with butter or oil for a golden top.
