Yield: Serves 4

Pass around a bowl of grated Parmesan cheese to sprinkle on top.

Ingredients:

  • 1 pound fresh spinach
  • 1 carrot, peeled and sliced
  • 1 onion, peeled and sliced
  • 1 stalk celery, sliced
  • 4 cups chicken stock
  • Croutons

Instructions:

Wash spinach in warm water. Place in soup kettle with carrot, onion, celery, and stock. Simmer, partially covered, 20 minutes. Press through food mill. Return to kettle and reheat. Garnish with croutons.
