Strawberry Nut Bread

Yield: Makes 1 loaf.

A moist, mild-flavored dark bread. Refrigerate to lengthen keeping time.

Ingredients:

  • 2 cups sifted flour
  • 3/4 cup sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup chopped nuts
  • 1 egg
  • 2 tablespoons melted shortening
  • 1-1/2 cups strawberries, frozen or fresh, mashed

Instructions:

Preheat oven to 350 degrees F. Grease a 9x5-inch loaf pan. Mix together dry ingredients, then add nuts. In separate bowl beat egg; add shortening and strawberries. Add wet mixture to dry and stir until blended. Pour into greased pan and bake 45 to 60 minutes. Allow to cool, then serve with butter or cream cheese.
