Yield: Serves 6-8.

This Sweet Potato Casserole is a very sweet dish that goes well with pork or fowl.

Ingredients:

  • 6 small sweet potatoes
  • 1 small can crushed pineapple, drained
  • Dash of salt
  • 1/2 cup miniature marshmallows
  • 1/3 cup honey

Instructions:

Boil potatoes with skins on. When cool enough to handle, peel and slice into 1/2-inch pieces. Layer sweet potatoes and pineapple in a buttered 1-quart casserole. Add dash of salt. Top with marshmallows and pour honey over all. Bake for 10 minutes at 400 degrees F.
