Yield: Makes 40 to 50 meatballs.

An all-American dish with a Chinese accent, these meatballs are a favorite party food.

Ingredients:

  • 1 pound ground chuck
  • 1 teaspoon salt
  • 1 tablespoon minced onion
  • 1/4 cup fine dry bread crumbs
  • 1 egg, slightly beaten
  • 1 1-pound can pineapple chunks, drained (reserve 1/3 cup of syrup)
  • 2/3 cup catsup
  • 2/3 cup cider vinegar
  • 1/3 cup light brown sugar, packed

Instructions:

Mix the beef, salt, onion, crumbs, egg, reserved pineapple syrup and 1/2 cup of the chunks, cut very small. Shape into small balls.

Bring the catsup, vinegar and brown sugar to a boil. Add the meatballs and remaining pineapple chunks. Simmer, covered for 25 minutes. Serve hot, with cooked rice.
