Totally Nuts Oatmeal Mounds

Yield: akes about 40 large cookies.

Ingredients:

  • 1-1/2 cups (3 sticks) margarine
  • 1 cup honey
  • 4 eggs
  • 1 tablespoon vanilla extract
  • 1 teaspoon salt
  • 5 cups old-fashioned oatmeal
  • 2 cups whole-wheat flour
  • 1 tablespoon baking powder
  • 1 cup coconut
  • 1 cup chocolate chips
  • 1 cup cashew halves
  • 1 cup raisins
  • 1 cup peanuts
  • 1 cup sunflower seeds
  • 1 cup walnut halves

Instructions:

Cream the margarine, honey, eggs, and vanilla; set aside. Mix the salt, oatmeal, flour, and baking powder in a large bowl; then combine with margarine mixture. Fold in coconut, chocolate chips, cashews, raisins, peanuts, sunflower seeds, and walnuts. Using round ice cream scoop, mound onto a lightly greased cookie sheet and bake at 325 degrees F for 20 minutes. Cookies will not flatten -- they will stay mounded!
