Ingredients:

  • 1 turkey carcass (plus leftover bits of meat)
  • 2-1/2 quarts cold water
  • 4 carrots, peeled and chopped
  • 2 cloves garlic, chopped
  • 2 teaspoons thyme or sage
  • 1/4 cup celery leaves
  • 1 bay leaf
  • Salt and pepper to taste

Instructions:

Combine all ingredients in soup kettle. Simmer 2 hours, partially covered. Skim occasionally. Strain through cheesecloth. Cool, chill, and skim fat from top.
