Vegetable Quiche

Yield: Serves 4-6.

Charlie created this recipe at home with Sherry and tried it on his friends at the nursing home. It turned out to be one of his prize winners.

Ingredients:

  • 9-inch pie shell, unbaked
  • 2 cups cooked vegetables
  • 4 eggs, beaten
  • 3/4 cup milk
  • 1/8 teaspoon each, nutmeg and pepper
  • 1-1/2 cups grated cheddar cheese

Instructions:

Pour your favorite drained vegetable (or mixture of vegetables) into the unbaked pie shell. Beat eggs, milk, and spices together and pour over vegetables. Sprinkle grated cheese evenly over the top. Bake at 325 degrees F for 45 to 60 minutes, or until knife inserted comes out clean. Cut and serve.
