Vichyssoise II

Yield: Serves 6-8

This version calls for celery and a splash of white wine.

Ingredients:

  • 4 tablespoons butter
  • 4 leeks, white parts only, sliced
  • 2 onions, peeled and sliced
  • 2 stalks celery, sliced
  • 1-1/2 quarts chicken stock
  • 2 potatoes, peeled and chopped
  • 1 cup cream
  • 1/4 cup dry white wine
  • Salt and pepper to taste
  • Chopped chives
