Watercress Piecrust

Yield: 1 crust

Adds "zing" to a meat or vegetable pie.

Ingredients:

  • 1 cup sifted flour
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • pinch of powdered thyme
  • 2 tablespoons lard
  • 1/3 cup finely chopped watercress leaves, well dried
  • 1/2 cup cold milk

Instructions:

Sift the flour again with the baking powder, salt, and thyme. With two knives or a pastry blender, cut the lard, and watercress leaves alternately into the flour. Add the milk gradually, and roll out on a floured board.
