Yield: Serves 2-3.

For extra flavor, place a thin slice of fresh tomato on toast before adding sauce.

Ingredients:

  • 1 teaspoon dry mustard
  • 1/2 teaspoon salt
  • 1 teaspoon flour
  • 1 tablespoon water
  • 1 egg
  • 3/4 cup milk
  • 2 cups grated cheddar cheese
  • Dash Tabasco
  • 4 to 5 slices toast

Instructions:

In top of double boiler over hot water mix together mustard, salt, flour,and water to form a smooth paste. Add egg and beat with whisk until smooth. Slowly add milk and stir until blended. Add cheese and stir constantly until melted and smooth. Season with Tabasco. Serve hot on slices of toast.
