Yield: Serves 6.

A dandy cabbage salad or slaw

  • 1 small head cabbage, shredded
  • 1/2 bunch celery, chopped
  • 1 tablespoon dry mustard
  • 1/4 cup vinegar
  • 2 tablespoons sugar
  • Salt and pepper
  • 1 egg, beaten
  • 1 apple, peeled, cored and chopped (optional)
  • 1/4 cup sour cream (optional)

Combine cabbage and celery. Mix mustard with 1 tablespoon vinegar. Heat remaining vinegar until boiling, and stir in mustard, sugar, salt and pepper, and beaten egg. Cook over low heat, stirring until thick. Pour hot sauce over cabbage and celery and mix well. Chill and serve as is, or mix optional apple and sour cream into chilled slaw just before serving.
