Yield: 3 dozen


  • 1 cup grated zucchini
  • 1 teaspoon baking soda
  • 1 cup sugar
  • 1/2 cup shortening or butter
  • 1 egg, beaten
  • 2 cups flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup chopped nuts
  • 1 cup raisins


Preheat oven to 375 degrees F. Mix together zucchini, baking soda, sugar, butter, and beaten egg. Sift in flour, cinnamon, cloves, and salt. Stir to blend. Stir in nuts and raisins, and drop batter by the teaspoonful onto a greased cookie sheet. Bake 12 to 15 minutes.
