Fresh Peach Pie

Yield: Serves 6

Magnificent! You will fantasize about this one in midwinter. --Woodbound Inn, Jaffrey, New Hampshire

  • 1 cup sugar
  • 3-1/2 tablespoons cornstarch
  • 1/2 cup water
  • 1 tablespoon butter
  • 7 or 8 fresh peaches, peeled
  • 9-inch pie shell, baked
  • Whipped cream for topping
  • Slivered almonds for garnish

Combine sugar and cornstarch in a saucepan. Add water and butter and bring to a boil. Mash 3 peaches and add to syrup. Reduce heat, simmer until thickened, and cool. Slice remaining peaches into pie shell, pour syrup mixture over sliced peaches, and chill. Top with whipped cream and garnish with slivered almonds.
