Basic American Meat Loaf

Yield: 6 to 8 servings

  • 1-1/2 pounds ground meat (all beef or a combination of veal, pork, and beef)
  • 1 egg
  • 1 cup liquid (such as milk or tomato juice)
  • 1/2 cup dry ingredients (such as bread crumbs)
  • 1/4 cup chopped onion
  • salt and pepper, to taste

Preheat oven to 350 degrees F. Combine all ingredients in a large mixing bowl, using your hands to mix everything together well. Pat mixture into a 9x5-inch loaf pan and bake for 1 hour.

There is not much zing to this recipe, in my opinion. I add 1 large clove garlic chopped finely, and a level tsp of thyme (unless pork is added). To my family's taste, the garlic and thyme enhance the basic meatloaf flavour. We also mix it very thoroughly with our hands till the fat begins to stick to the hands. Meatloaf is then more solid and slices better. – Reviewed by Annie Morgan

This makes a good basic meat loaf, but it needs some spicing up. The way it is, it is kind of bland. – Reviewed by Melissa Perkins

I would add 1/2 to 1 cup of seasoned tomato sauce for the liquid, add beaten egg and to this mixture stir in 1 envelope of Lipton Dry Onion Soup Mix and 1 clove minced garlic. Add to this 1 to 1-1/2 cups of Quick Cooking Oats. Shape in oblong baking dish and crisscross top with ketchup. Bake at 350 degrees for 1 hour.
