Harvest Pumpkin Bisque

- 3 tablespoons unsalted butter
- 1 cup chopped onion
- 2 tablespoons chopped fresh ginger
- Big pinch of cinnamon
- Pinch of crushed red pepper flakes
- 1 24-ounce jar unsweetened applesauce
- 1 30-ounce can Libby’s 100% Pure Pumpkin
- 6 to 8 cups low-sodium chicken broth
- 1/4 cup maple syrup
- Kosher salt, to taste
- 2 cups whole milk, half-and-half, or light cream
- Garnish: dried chile peppers
In a large saucepan over medium-high heat, melt butter and saut° onion until soft. Add ginger, cinnamon, and red pepper flakes, then sauté a few seconds longer. Add applesauce, pure pumpkin, broth, maple syrup, and salt. Stir to combine, then simmer 5 minutes, until the flavors combine. Stir in milk or cream and heat through. Garnish with dried chile peppers.
