Marinated Mozzarella Balls

Yield: 15 servings

Buy the freshest mozzarella you can: the texture should be spongy, not dense.

  • 1/3 cup olive oil
  • 1/2 teaspoon garlic powder
  • 1 teaspoon red chile flakes
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1-1/2 pounds cherry-sized mozzarella balls
  • Garnish: 3 tablespoons chopped flat-leaf parsley

In a medium bowl, mix the first five ingredients with a whisk. Add mozzarella balls and toss gently with your hands. Pour into a serving bowl, garnish with parsley, and serve with toothpicks.

This was a very good recipe, and I am not just saying that because I love mozzarella sticks, either. The idea of making mozzarella balls instead of sticks is wonderful, as well. Well done! – Reviewed by Kristen C

I tried this recipe and made one change. I left out the chile flakes. I let them marinate for several hours and they were wonderful. With fresh tomato slices on the side, they were great with steak. – Reviewed by Judythe Burkinshaw
