Marinated Mozzarella Balls

Buy the freshest mozzarella you can: the texture should be spongy, not dense.
- 1/3 cup olive oil
- 1/2 teaspoon garlic powder
- 1 teaspoon red chile flakes
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1-1/2 pounds cherry-sized mozzarella balls
- Garnish: 3 tablespoons chopped flat-leaf parsley
In a medium bowl, mix the first five ingredients with a whisk. Add mozzarella balls and toss gently with your hands. Pour into a serving bowl, garnish with parsley, and serve with toothpicks.

I tried this recipe and made one change. I left out the chile flakes. I let them marinate for several hours and they were wonderful. With fresh tomato slices on the side, they were great with steak. – Reviewed by Judythe Burkinshaw
