Lynn Olsen's Garbage Cake

Cakes and Frostings Recipes

  • 1 large orange, juice and rind
  • 1-3/4 cups sugar
  • 1/2 to 1 cup raisins
  • 1/2 cup butter
  • 2 eggs
  • 2/3 cup sour milk or buttermilk
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 2 cups flour

Squeeze juice from orange, mix with 3/4 cup of the sugar, and set aside. Put raisins and orange rind through meat grinder; set aside. Cream butter with remaining 1 cup sugar, then beat in everything else, adding ground mixture last. Turn batter into a greased and floured tube pan, and bake at 375 degrees F until a toothpick comes out clean, about 40 to 50 minutes. Remove from pan, and put on cooling rack suspended over a plate. Pour orange-juice mixture over hot cake; cool before serving.
