Alden's Apple Cream Pennies

Cookies and Bars Recipes

Yield: 65 to 70 1-inch cookies

  • 2-1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup dark brown sugar, firmly packed
  • 1/2 cup sugar
  • 1 cup butter, softened
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • Filling:
  • 8 ounces cream cheese, softened
  • 1/4 cup sugar
  • 1/4 cup apple butter

Mix flour, baking soda, and salt.

In a separate large bowl, blend brown sugar, sugar, and butter with an electric mixer on medium speed, scraping down the sides of the bowl. Add eggs and vanilla, then beat at medium speed until light and fluffy.

Add the flour mixture and blend at low speed until just combined. Do not overmix.

Shape dough into marble-size balls. Place balls onto ungreased cookie sheet, about 1 inch apart. Bake 10 to 11 minutes at 300 degrees , but do not let them brown. Transfer cookies to a cool, flat surface.

Filling:

Blend cream cheese and sugar on medium speed until fluffy. Add apple butter and beat until smooth and thoroughly combined. Spread 1 teaspoon of filling onto the flat side of a cookie. Top with another cookie to create a sandwich. Repeat with remaining cookies and filling. (Note: Fill cookies just before serving.)

Very yummy! The recipe makes about a zillion cookies, so there is a lot of repetitious prep work, but it's worth it for the delicious bite-sized little sandwiches. They're not really particularly "apple-y"... maybe there's a way to increase the apple butter without thinning the cream filling too much? Someone at my work made a recipe similar to this one and I had to find it myself because they tasted so good! My only problem was rolling the dough into marbles -- I think maybe the dough needs to be refrigerated first, but the recipe doesn't specify. My cookies came out much bigger because of this. Also, I added a teaspoon of apple pie spice to the dough as well. You can't find this cookie in any recipe books. Thanks! – Anonymous Review
