Irish Soda Bread

Yield: Makes 6 to 8 servings.

  • 4 cups flour
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 cup sugar
  • 2 cups raisins or currants
  • 1/4 cup butter, softened
  • 1-3/4 cups buttermilk
  • 1 egg

Combine dry ingredients by sifting, then add raisins. Cut softened butter into dry ingredients. Whisk the buttermilk and egg together, then add it to the flour mixture. Knead briefly on floured surface just until smooth, about 2 minutes. Grease two pie pans, divide dough in half, and press into two round, flattened loaves. Cut crosses into the top of each and bake at 350 degrees F for 40 minutes, or until done.
