Pumpkin Cookies
Cookies and Bars Recipes
Yield: Makes about 5 dozen cookies.
- 1/2 cup (1 stick) butter, softened
- 1-1/4 cups brown sugar
- 2 eggs, beaten
- 1-1/2 cups pumpkin, canned or cooked
- 1-1/2 cups flour
- 1 tablespoon baking powder
- 1/4 teaspoon ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 cup walnuts, chopped
Preheat oven to 400 degrees F. Cream butter and sugar, then mix in eggs and pumpkin. Mix dry ingredients in sifter, then sift into pumpkin mixture. Stir, and add nuts. Drop by spoonfuls onto a baking sheet. Bake for 15 minutes, or until lightly browned.
